Kesar Kulfi
Here’s a recipe for kesar kulfi:
Ingredients:
- 2 cups heavy cream
- 1 cup unsweetened almond milk
- 1/2 cup powdered stevia
- 1/4 cup chopped almonds
- 1/4 cup chopped pistachios
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground saffron
Instructions:
- In a large mixing bowl, combine the heavy cream, almond milk, powdered stevia, chopped almonds, chopped pistachios, ground cardamom, and ground saffron. Mix well until everything is fully combined.
- Pour the mixture into a blender and blend until everything is smooth and creamy.
- Pour the mixture into kulfi molds or small paper cups and freeze for at least 4 hours or until the kulfi is fully frozen.
- When ready to serve, remove the kulfi from the molds or cups by dipping them in warm water for a few seconds.
- Garnish the kulfi with additional chopped almonds and pistachios, if desired.
Indian kesar kulfi is rich and creamy, with a delicious nutty flavor from the almonds and pistachios. It’s sweetened with stevia, that won’t raise blood sugar levels. This is a great dessert option in summer.
