Quinoa Veggie Bowl


1 cup quinoa, cooked

1 cup mixed vegetables (carrots, bell peppers, zucchini)

1 cup chickpeas, cooked

1 tbsp olive oil

Salt and pepper to taste


  1. In a pan, sauté the mixed vegetables in olive oil until they are slightly tender.
  2. Add the cooked chickpeas and cook for an additional 2-3 minutes.
  3. Season with salt and pepper.
  4. Serve the veggies and chickpeas over a bed of cooked quinoa.
  5. Nutritional Value (per serving): Calories: 440 Protein: 18g Carbohydrates: 69g Fat: 11g Fiber: 14g
