Mix Veg Soup


  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 carrot, chopped
  • 1 zucchini, chopped
  • 1/2 cup green beans, chopped
  • 1/2 cup cucumber
  • 1/2 cup green peas
  • 1 tomato, chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt and black pepper to taste
  • 4 cups vegetable broth or water
  • Fresh cilantro leaves for garnish


  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger to the pot and sauté until the onions turn translucent.
  3. Add the chopped carrot, zucchini, green beans, cucumber, and green peas to the pot and sauté for 2-3 minutes.
  4. Add the chopped tomato to the pot and cook until it becomes soft and mushy.
  5. Add the cumin powder, coriander powder, turmeric powder, garam masala, salt, and black pepper to the pot and stir well.
  6. Pour the vegetable broth or water into the pot and stir well.
  7. Bring the soup to a boil, then reduce the heat to low and let it simmer for 15-20 minutes until the vegetables are cooked and tender.
  8. Remove the pot from the heat and let it cool down for a few minutes.
  9. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  10. Garnish the mixed vegetable soup with fresh cilantro leaves and serve hot.
