Mix Veg Soup
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 carrot, chopped
- 1 zucchini, chopped
- 1/2 cup green beans, chopped
- 1/2 cup cucumber
- 1/2 cup green peas
- 1 tomato, chopped
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt and black pepper to taste
- 4 cups vegetable broth or water
- Fresh cilantro leaves for garnish
Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger to the pot and sauté until the onions turn translucent.
- Add the chopped carrot, zucchini, green beans, cucumber, and green peas to the pot and sauté for 2-3 minutes.
- Add the chopped tomato to the pot and cook until it becomes soft and mushy.
- Add the cumin powder, coriander powder, turmeric powder, garam masala, salt, and black pepper to the pot and stir well.
- Pour the vegetable broth or water into the pot and stir well.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for 15-20 minutes until the vegetables are cooked and tender.
- Remove the pot from the heat and let it cool down for a few minutes.
- Use an immersion blender or transfer the soup to a blender and blend until smooth.
- Garnish the mixed vegetable soup with fresh cilantro leaves and serve hot.
