Cucumber Kiwi Sandwich


  • 4 slices whole grain bread
  • 1 cucumber, thinly sliced
  • 1 kiwi, peeled and thinly sliced
  • 2 tbsp cream cheese
  • 1 tbsp honey
  • Salt and pepper to taste


  1. In a small bowl, mix the cream cheese and honey until smooth.
  2. Toast the bread slices and spread the cream cheese mixture on one side of each slice.
  3. On two slices of bread, arrange the sliced cucumbers.
  4. On the other two slices of bread, arrange the sliced kiwi.
  5. Sprinkle salt and pepper on top of the cucumbers and kiwi.
  6. Place one slice of bread with cucumbers on top of a slice with kiwi to make a sandwich.
  7. Repeat with the remaining bread slices.
  8. Cut the sandwiches in half and serve.
