Apple Almond Salad
Ingredients:
- 1 cup mixed nuts (almonds, cashews, walnuts, pecans, etc.)
- 2 cups mixed greens (spinach, arugula, lettuce, etc.)
- 1/2 cup diced apple
- 1/2 cup diced pear
- 1/4 cup crumbled feta cheese
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra virgin olive oil
- Salt and black pepper to taste
Instructions:
- Preheat the oven to 350°F (180°C).
- Spread the mixed nuts on a baking sheet and roast in the preheated oven for 8-10 minutes until lightly browned and fragrant. Let them cool down.
- In a large mixing bowl, toss together the mixed greens, diced apple, diced pear, dried cranberries, and crumbled feta cheese.
- Add the roasted mixed nuts to the mixing bowl.
- In a separate small bowl, whisk together the balsamic vinegar, extra virgin olive oil, salt, and black pepper.
- Drizzle the dressing over the salad mixture and toss everything together.
- Serve the mixed nuts salad immediately.
