Apple Almond Salad


  • 1 cup mixed nuts (almonds, cashews, walnuts, pecans, etc.)
  • 2 cups mixed greens (spinach, arugula, lettuce, etc.)
  • 1/2 cup diced apple
  • 1/2 cup diced pear
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt and black pepper to taste


  1. Preheat the oven to 350°F (180°C).
  2. Spread the mixed nuts on a baking sheet and roast in the preheated oven for 8-10 minutes until lightly browned and fragrant. Let them cool down.
  3. In a large mixing bowl, toss together the mixed greens, diced apple, diced pear, dried cranberries, and crumbled feta cheese.
  4. Add the roasted mixed nuts to the mixing bowl.
  5. In a separate small bowl, whisk together the balsamic vinegar, extra virgin olive oil, salt, and black pepper.
  6. Drizzle the dressing over the salad mixture and toss everything together.
  7. Serve the mixed nuts salad immediately.

This salad is rich in protein, healthy fats, fiber, vitamins, and minerals, making it a great choice for a healthy and filling meal.
