Indian Salad:


  • 2 cups of mixed greens (spinach, lettuce, etc.)
  • 1/2 cup of chopped cucumber
  • 1/2 cup of chopped tomatoes
  • 1/2 cup of chopped bell peppers (red, green, or yellow)
  • 1/2 cup of boiled chickpeas
  • 1/4 cup of chopped red onion
  • 1/4 cup of chopped cilantro
  • Juice of 1 lemon
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin powder
  • Salt and black pepper to taste


  1. Wash and chop all the vegetables and mix them together in a large salad bowl.
  2. Add the boiled chickpeas to the bowl and toss everything together.
  3. In a separate bowl, whisk together the lemon juice, olive oil, cumin powder, salt, and black pepper.
  4. Drizzle the dressing over the salad and toss everything together to ensure that the vegetables are evenly coated with the dressing.
  5. Garnish the salad with chopped cilantro and serve immediately.
