Cucumber Kiwi Sandwich
Ingredients:
- 4 slices whole grain bread
- 1 cucumber, thinly sliced
- 1 kiwi, peeled and thinly sliced
- 2 tbsp cream cheese
- 1 tbsp honey
- Salt and pepper to taste
Instructions:
- In a small bowl, mix the cream cheese and honey until smooth.
- Toast the bread slices and spread the cream cheese mixture on one side of each slice.
- On two slices of bread, arrange the sliced cucumbers.
- On the other two slices of bread, arrange the sliced kiwi.
- Sprinkle salt and pepper on top of the cucumbers and kiwi.
- Place one slice of bread with cucumbers on top of a slice with kiwi to make a sandwich.
- Repeat with the remaining bread slices.
- Cut the sandwiches in half and serve.
