Indian Salad:
Ingredients:
- 2 cups of mixed greens (spinach, lettuce, etc.)
- 1/2 cup of chopped cucumber
- 1/2 cup of chopped tomatoes
- 1/2 cup of chopped bell peppers (red, green, or yellow)
- 1/2 cup of boiled chickpeas
- 1/4 cup of chopped red onion
- 1/4 cup of chopped cilantro
- Juice of 1 lemon
- 1 tablespoon of olive oil
- 1 teaspoon of cumin powder
- Salt and black pepper to taste
Instructions:
- Wash and chop all the vegetables and mix them together in a large salad bowl.
- Add the boiled chickpeas to the bowl and toss everything together.
- In a separate bowl, whisk together the lemon juice, olive oil, cumin powder, salt, and black pepper.
- Drizzle the dressing over the salad and toss everything together to ensure that the vegetables are evenly coated with the dressing.
- Garnish the salad with chopped cilantro and serve immediately.
