Quinoa Veggie Bowl
Ingredients:
1 cup quinoa, cooked
1 cup mixed vegetables (carrots, bell peppers, zucchini)
1 cup chickpeas, cooked
1 tbsp olive oil
Salt and pepper to taste
Instructions:
- In a pan, sauté the mixed vegetables in olive oil until they are slightly tender.
- Add the cooked chickpeas and cook for an additional 2-3 minutes.
- Season with salt and pepper.
- Serve the veggies and chickpeas over a bed of cooked quinoa.
