Aelo Vera Sabji

ingredients:

  • 1 large aloe vera leaf
  • 1 tablespoon coconut oil
  • 1 teaspoon cumin seeds
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt, to taste
  • 1/4 cup water

Instructions:

  1. Cut the aloe vera leaf in half lengthwise and remove the thorns and skin. Cut the flesh into small pieces and set aside.
  2. In a large pan, heat the coconut oil over medium heat.
  3. Add the cumin seeds and let them sizzle for a few seconds.
  4. Add the chopped onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
  5. Add the turmeric powder, red chili powder, and salt. Stir well.
  6. Add the chopped aloe vera to the pan and stir to combine.
  7. Add the water and bring the mixture to a simmer.
  8. Cover the pan and cook until the aloe vera is tender, about 10-15 minutes.
  9. Uncover the pan and cook for a few more minutes until the liquid has evaporated and the sabji is dry.
  10. Serve the aloe vera sabji hot with rice or Roti.
