Vegan Pakodas
Ingredients:
- 1 small pumpkin, peeled and grated
- 1 cup chickpea flour
- 1/4 cup rice flour
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt, to taste
- Oil, for frying
Instructions:
- In a large mixing bowl, combine the grated pumpkin, chickpea flour, rice flour, cumin seeds, turmeric powder, red chili powder, garam masala, and salt. Mix well.
- Gradually add water to the mixture, stirring until you have a thick, smooth batter.
- Heat oil in a deep frying pan over medium-high heat.
- Using a tablespoon, drop spoonfuls of the batter into the hot oil, and fry until golden brown and crispy.
- Use a slotted spoon to remove the pakodas from the oil and transfer them to a plate lined with paper towels to drain excess oil.
- Serve the pumpkin pakodas hot with your favorite dipping sauce.
